Description
Brewed from certified organic rice using the traditional Kimoto method and without the addition of cultured yeast, this sake is a true expression of nature and terroir. Indigenous microorganisms drive the fermentation, creating remarkable purity, lively acidity, and layered complexity. The result is a vibrant, food-friendly sake that beautifully reflects Senkin's philosophy of minimal intervention and natural brewing.

Senkin’s sake are brighter and juicier than other sake; their focus is principally on deviating from the norm with elements of higher acidity and residual sugar levels.
Applying the same concept as a Domaine or Estate, Senkin uses the same water for brewing as that which grows their rice, and they will only use contract-farmed Omachi, Yamada Nishiki, or Kame no O rice grown within 5 minutes of the brewery. They proudly implement both modern and traditional brewing methods across their various sake series.
Tasting notes
Nose: Fresh and expressive with aromas of pear, green apple, citrus, and delicate white flowers. Palate: Pure and vibrant, offering crisp orchard fruit, gentle rice sweetness, lively acidity, and soft umami with a silky texture. Finish_ Clean, refreshing, and elegant, with lingering fruit and a delicate mineral note.
