Ninki Shuzo, a well-known sake brewery, is unwavering in its dedication to quality and authenticity. They carefully create sake, putting in maximum effort and avoiding shortcuts. Using traditional tools like wooden implements, a Japanese steaming cauldron, and koji fermentation trays, they deliberately avoid more efficient alternatives.
Tasting notes
Nose: Clean and inviting with notes of steamed rice, cereal grain, light apple, and a touch of earthiness. Palate: Smooth and well-balanced, with gentle rice sweetness, soft umami, and a clean, dry character that makes it easy to enjoy every day. Finish: Refreshing and crisp, with subtle grain notes and a pleasant, lingering umami.
