Inspired by the smooth elegance of silk, Shichiken The Silk is a refined Junmai Daiginjo with a remarkably velvety texture. Delicate aromas of orchard fruit and flowers are complemented by vibrant acidity and subtle umami, resulting in a graceful, beautifully balanced sake with a long, elegant finish. Shichiken Brewery is located in the center of Japan at Hakushucho, Hokuto City, Yamanshi prefecture. Hokuto City is known for its pristine water source, which attracts several major companies to set up mineral water factory in Hokuto City making Japan’s number one place for mineral water production.
In 2014 Minami Alps National Park which includes Mount Kaikoma was selected as UNESCO Eco Park, also known as UNESCO biosphere reserve list, certifying it as mountain with world class water. Shichiken is the only sake brewery in Hakushu-cho, Hokuto City, Yamanashi prefecture and the only sake that is produced with water from Mount Kaikoma.
Tasting notes
Nose: Elegant aromas of white peach, pear, melon, and delicate white flowers, with a subtle hint of fresh rice. Palate: Exceptionally smooth and silky, offering layers of ripe orchard fruit, gentle rice sweetness, refined umami, and bright acidity. Its velvety texture lives up to its name, creating a graceful and harmonious palate. Finish: Long, clean, and elegant, with lingering fruit, soft minerality, and a beautifully smooth finish.
