Description
A naturally sparkling sake with fine bubbles, vibrant fruit aromas, and a silky texture from its delicate lees. Fresh, elegant, and beautifully balanced, Yama no Kasumi—meaning "Mountain Mist"—captures the purity of Yamanashi's renowned spring water, making it a delightful aperitif and an excellent companion to light cuisine.
Natural bubbles from the second fermentation is locked in the bottle. Medium dry sparkling sake with subtle bubbles. Complex well balanced palate with a fine aftertaste.
Enjoy as refreshing aperitif, served together with a sushi meal or together with raw oysters.
Best served cold in a champagne flute, keep upside down for 30 seconds before serving.

Shichiken Brewery is located in the center of Japan at Hakushucho, Hokuto City, Yamanshi prefecture. Hokuto City is known for its pristine water source, which attracts several major companies to set up mineral water factory in Hokuto City making Japan’s number one place for mineral water production.
In 2014 Minami Alps National Park which includes Mount Kaikoma was selected as UNESCO Eco Park, also known as UNESCO biosphere reserve list, certifying it as mountain with world class water. Shichiken is the only sake brewery in Hakushu-cho, Hokuto City, Yamanashi prefecture and the only sake that is produced with water from Mount Kaikoma.
Tasting notes
Appearance: Pale, lightly cloudy with fine, persistent bubbles. Nose: Fresh aromas of green apple, white peach, citrus, and delicate floral notes with a hint of creamy rice. Palate: Light and refreshing, featuring crisp orchard fruit, gentle rice sweetness, lively acidity, and soft, creamy bubbles. The slight cloudiness adds a smooth, silky texture without heaviness. Finish Clean, crisp, and refreshing, with lingering fruit and a delicate creamy finish.
Serving
Suggestions: Well chilled (4–6°C): Serve as an aperitif or celebratory drink. Gently invert the bottle before opening to evenly distribute the fine lees. Best enjoyed in a flute or white wine glass.
