Producer – Hachinohe Shuzo, Aomori
Founded in 1775 in Hachinohe, Aomori Prefecture, Hachinohe Shuzo is a historic family-owned brewery known for its Mutsu Hassen sake. The brewery focuses on expressing the character of Aomori through local rice, water and yeast, while combining traditional brewing techniques with a modern, fruit-driven style.
Mutsu Hassen is particularly recognised for its expressive aromas, fresh acidity and juicy, elegant character. The brewery places strong emphasis on sustainability and craftsmanship and has received numerous awards both in Japan and internationally.
For Mutsu Hassen Hanaomoi 50, the brewery uses Hanaomoi, a premium sake rice developed in Aomori, polished to 50%, creating a Junmai Daiginjo that showcases both the local terroir and Hachinohe Shuzo’s distinctive aromatic style.
Tasting notes
Elegant and aromatic, with fresh notes of melon, green apple and kiwi, followed by a smooth, silky texture. Gentle sweetness and refreshing acidity are balanced by rich rice umami, leading to a clean, delicate finish. The umami becomes more pronounced as the sake warms in the glass.
Serving
Suggestions: Enjoy chilled at around 8–12°C for a fresh, fruity and elegant character. It can also be enjoyed closer to room temperature, where its fuller texture and rice umami become more expressive. A wine glass works particularly well to highlight the aroma.
Pairs with: Excellent with sashimi, sushi, scallops, white fish, tempura and duck. Its combination of fruitiness, acidity and umami also works beautifully with buttery seafood dishes, lightly creamy sauces and soy-based dishes.
