Mizumoto Junmai
Crafted using the ancient Mizumoto brewing method dating back to the Muromachi period, this distinctive Junmai showcases both tradition and elegance. Delicate aromas of white peach, ripe melon and fresh cream lead to a beautifully balanced palate, where gentle sweetness is lifted by vibrant acidity and a subtle layer of umami. Tasting notes
Nose: Elegant aromas of white peach, melon, fresh cream, and delicate rice sweetness, with subtle yoghurt-like notes characteristic of the ancient Mizumoto brewing method. Palate: Smooth and beautifully balanced, offering ripe stone fruit, gentle rice sweetness, lively acidity, and soft umami. The traditional Mizumoto method creates a naturally rounded texture while maintaining a crisp, dry profile. Finish: Long, clean, and refreshing, with lingering fruit, bright acidity, and an elegant savoury finish.
